Meal Prep I’m Doubling Down On:
Crockpot Chicken.
Literally one of the most cost efficient, time friendly, and healthy meal prep recipes out there.
If you’re someone who doesn’t enjoy spending a ton of time in the kitchen cooking your meals (not to mention cleaning up) but want to prioritize your protein intake, this is for you.
I typically use a mixture of chicken thighs and breasts, but you can choose one or the other depending on your personal preference.
Place 2-4 pounds of chicken into the crockpot, cover with broth (extra points for bone broth), and then add a plethora of seasonings to cover.
There are countless ways to change it up so you don’t get sick of it, which is the best thing about this recipe.
Some weeks I’ll toss in barbecue sauce, salt, pepper, and garlic.
Other times I’ll top it with a couple of cans of my favorite salsa and taco seasoning.
I’ve even used buffalo sauce and a couple of scoops of plain Greek yogurt.
When it comes to mealtime, there are even more ways to personalize the dish to your liking.
Whether it’s throwing the chicken on a bed of rice, wrapping it in a pita bread, constructing tacos with tortillas, or just having the chicken alongside a sweet potato and veggies… the world is your oyster.
This will provide me 5-7 meals depending on the amount of chicken I use and because of the versatility it offers, I never get to the end of the week and think I can’t stomach it again.
There’s no excuse not to hit your protein target with this one!
Mindset I’m Leaning Into:
Finding joy.
Just this week I was on my daily walk to the train when mother nature decided to absolutely downpour as I stepped out the door.
Obviously, that wasn’t ideal.
But as I was rushing on my commute, unsuccessfully attempting to find a route where my socks wouldn’t get soaked, I realized I had a decision to make.
I could be frustrated and start my day off poorly or I could lean into the experience and find a way to enjoy it.
The choice I made was to slow down a little, even if it meant arriving at the train a little more soaked, and appreciate the change in weather after many days of extreme heat.
Countless times every day, we are confronted with this decision and all-too-often fall into the trap of letting circumstances outside of our control dictate our mood.
I stumbled upon a post on social media that same morning that summarizes this perfectly.

Podcast Insight:
I recently listened to a Huberman Lab episode dedicated to oral health.
I figured it would simply re-iterate what I already know: brush your teeth morning and night, make sure you floss, and prioritize biannual dental cleanings.
Yet, it was much more than that and I had an entire page of takeaways.
One being the importance of having a tongue scraper separate from your toothbrush.
So of course, I purchased one to find out what the big deal was and have benefited from it ever since.
We all know the pain of someone talking to us with bad breath, don’t be that person.
Most of the time, a regular tongue scraping routine will take care of the issue.

What else?
July 4th is on the doorstep. We all know this day is typically surrounded by less-than ideal health behaviors, so buffering those is key. How to buffer? Get in an early morning workout, eat clean for the early part of the day, and limit over-snacking by choosing protein-rich foods! But as always, enjoy life a little!
